Day 1: The Islands
Friday night kicked off our spring break. Since the weather is so beautiful here in Minnesota, we decided to stay home rather than travel to some warm place, such as Florida or California…who needs that? Okay…that’s not true at all, we would love to have gone somewhere for break, but we made a choice to get Jazz’s leg fixed and forfeit the vacation this year. But it is true, that we are having weather in the 60’s and 70’s, so we aren’t complaining. We started are break off with a wonderful dinner on Friday night. Since it is still lent, I made a Crispy Herbed Shrimp with a Chive Aioli Sauce and Roasted Asparagus & Cherry Tomatoes. Nate suggested a bottle of Pinot Grigio to go along with it, which was perfect. Kelly was off with Lauren at a church event and Megan was hanging out with Andra at her house, so we enjoyed a “dinner-for-two” at our “island” in the kitchen.
Day Two: The Safari & Italy
Last fall, Kelly had asked me if we can update her room and repaint it. She’s outgrown the butterflies and flowers. Her new look is to incorporate her favorite colors, blue & green, with her favorite print…zebra stripes. She searched the internet and found a comforter/bedspread at Target that she liked , so we went out looking for a few ideas and things for her room before we paint it this summer. She got lucky and found the zebra print comforter and a lamp with a zebra print on the shade. She’s off to a good start!
Nate was on dinner duty last night. He found a recipe for making pizza dough that he was hoping to try out. I wasn’t going to stop him! He made a tomato & cheese pizza that was so incredibly good, I didn’t want to stop eating it. The crust was crispy on the bottom, yet chewy at the ends. He put on fire roasted tomatoes, mozzarella cheese, oregano, salt, olive oil and a little ricotta cheese dolloped on top. It was fantastic! Just as if we were in Italy! We love his pizzas! I wish I knew how to say that in Italian.
Day 3: Hollywood
Today, we headed out to the movies to see Hunger Games. Megan got to go see this on Friday as an “all school fieldtrip”, so she stayed home with Nate, while Kelly and I met up with Terry and Dawn at the theater. We have all read the books and couldn’t wait to see it on the big screen. We weren’t disappointed, it was a good movie, but as always, the book was better.
After the movie, we needed a place to go and discuss the movie…sort of like a “book-club” would do after reading. There was a Dairy Queen nearby, and we thought this was the perfect pick-me-up after a dark movie. Blizzards & Moolatte’s and french fries. That did the trick. It was fun to hear everyone’s reviews and Kelly mentioned many things that were in the book, but were missing from the movie. It was a lot of fun and we’re looking forward to see Hunger Games 2, when that comes out.
