What a fabulous Thanksgiving we had this year!   I will just start out by saying how thankful I am to be a part of such wonderful families.   I say “families” because our Thanksgiving family has increased.  This year we were blessed to have the Solberg side present.  Cardell & Jere (aka: Grandma & Grandpa) came over on Wednesday and stayed with us until Friday.  Also present at the table, were Lindsey, Zach & Kinsey and our favorite college student, Courtney, was home to celebrate with us as well.

We started the day out with appetizers and beverages.  Everyone helped out by bringing some food for our table.  Kelly and Megan made my appetizers for me, while I worked on one as well.  Kelly decorated the turkey cupcakes and Megan rolled the green grapes in to carmel & peanuts to make the ‘carmel apple’ look-alikes.  Jere brought along her famous peanut butter & chocolate treats and a few others goodies.  I made BLAT dip.  Bacon, lettuce, avocado & tomatoes.  Greg brought a veggie & meat tray.  Mmm…it was all so good.   I love when everyone gets involved and shares their talents.

Nate was busy working on the turkey and side dishes.  Since his mom was coming this year, he decided to make a special dish for her.  She is from Cumberland, WI and they are known as the “Rutabaga Capitol of the World.”  Nate found a recipe for this root vegetable and had us all try it.  The dish looked very much like mashed potatoes, so some tried them without knowing & thinking they were scooping up potatoes (haha-Evan).  They are sweet and quite good.  Great idea and always good to try new foods.  Maybe this will be our new tradition each year….putting something on the table that no one has tried before.  Could be fun!

While everything is cooking, all the fun and chatting begins.  We love catching up with each other and hearing what’s new and happening with each other.  Greg told us about his promotion (and other things I won’t mention…gross), Courtney is excited to graduate in December, then do her internship, the three cousins…Daniel, Evan & Megan are closing in on their driver’s licenses, Kelly can’t stop thinking about the next musical she will be trying out for and then there was Kinsey who entertained us as soon as she walked in!   She just couldn’t get enough of Jazz and followed her around everywhere saying (in a very high-pitched voice)…”where did she go?”  When she finally caught Jazz, she laid down with her.  So cute!

It was finally time to eat.   We found that it works best to serve our Thanksgiving in a Buffet-Style, since we had two tables to fill.  Everything looks so delicious and we couldn’t wait to give thanks and dig in!

It wouldn’t be a party without dessert (or Terry).  I asked Lindsey and Terry to bring the desserts this year and they didn’t disappoint.  Terry made a wonderful… Better Than ? Pumpkin Cake (this is a family blog, so I’m keeping it clean).  Zach & Lindsey brought three kinds of pie!  Before we served the pies, Zach asked for some sugar and vanilla.  When we asked him why, he told us he needed to make some whip cream!  Sure enough, he got out the blender and whipped up some homemade cream for his pies.  It was so delicious!

If you saw my post on Facebook, I was complaining that I couldn’t find Thanksgiving napkins or plates this week.  Terry was all over this and said that she’d decorate her own plate to make it festive.  Of course, we got out the markers so she could have at it.  Good thing she never went to college as an art major.  ha!

At the end of the evening, we could all relax and just have some fun.  My sister down in Arizona was bragging on FB about enjoying pre-holiday time out on the patio, in the warm weather.  Lindsey saw this and thought it would be fun to post a picture of ourselves enjoying a Minnesota Thanksgiving out on our deck.  So we did it!   Brrr…it was so cold!!!  hahaha, but we had a blast doing this.  Jealous Peg?  heehee

I can’t end this blog without mentioning that the Packers played on Thanksgiving day this year.  Yes, I did allow this on our TV for my in-laws to enjoy.  Problem was…they didn’t really enjoy their 40-10 loss to Detroit.   I did catch them upstairs at half-time having a little more fun with my BLAT dip.  You knew I had to put this in.  (wink-wink)
