Easter Brunch

What a spectacular Easter Day we had today, here in Minnesota.  The weather was absolutely perfect.  A sunny, 72 degrees and no wind.  Perfect for our Easter brunch out on the deck.  Of course, I had everything set up inside (because we never trust our forecast anymore), but the weather people got it right and we were able to take it all outdoors.  I think the prayers in church may have help a bit too.  haha

We haven’t gotten the family together for Easter in quite a few years.  Easter seems to be the holiday that my brother or sister usually work, but this year they both had it off and so I asked if they’d like to come over and celebrate Nate’s birthday as well.  Yep, one more birthday for Nate.  I promise, this will be the last blog about that…till next year.   I even decorated my house half Easter, half Birthday.

We had Jim and Sandra, Terry and her boys, Greg, and even Courtney, my niece, was able to come over.  We love feeding starving college students.  She was thrilled to be invited and loved everything. She’s a great guest and always welcome at our house.

Since a celebration…we needed a special drink.  We made Mimosa’s!  Simple, a little champagne, a little orange juice and viola, you have a tasty, spring drink!  Well, it almost was that easy.  Greg brought a massive bottle of champagne over.  We were laughing at how big it was.  Then came time to pop the cork.  We gave it to Greg to take outside in case of explosion…he spent about 15 minutes trying to get that cork out.  It wouldn’t budge.

Courtney got on Google and starts yelling,  “Dad, try running hot water over it.”  That didn’t work either.  We tried a gripper around it, nope…no luck.  Then it was time for the toolbox.  I got Greg a wrench and he sat down at the table and with Sandra’s help, they popped that baby!  We all heard it and gave a cheer!  Yay, Mimosa’s for all!

As always, we had a terrific amount of food at our Easter Brunch.  On the menu this year was…Lemon Ricotta Pancakes with Blueberry Sauce, Italian Brunch Casserole, Guacamole Deviled Eggs, Chive Cream Cheese with Mango Chutney Dip, and Jim and Sandra brought a  Sausage Crostini appetizer.    Jim needed the grill, so he made his crostini’s out on the deck while we finished making things indoors.

Inside, we were busy plating food and eating food.  Look at all these delicious goodies!  Megan helped with my appetizer and cut up the cucumbers & apples.  Looks pretty Megs!

Nate’s pancakes were amazing.  They were big and fluffy and the blueberry sauce on top looked pretty!

The Italian Brunch Casserole was filled with veggies, sausage, cheese and bread cubes.  Then had an egg mixture poured over the top, and baked.  Yummy!

It was time to eat, let’s head outdoors!  I love saying that, because we haven’t been outdoors on our deck since last October.  It felt so good and we all loved the fresh air.  Makes us happy!

We made a special dessert today for Easter…Black Forrest Cake!  Okay, this is another birthday thing.  It’s Nate’s favorite cake that he requests every year on his birthday.  We saved this for today, so the family could watch him blow out his candles and wish him health and happiness.  Kelly frosted and decorated for me, while I was busy with the food prep.

Greg offered up his AARP card for the picture, letting Nate know his will be coming soon.  Nate has already received his application but has not filled it out yet.    So one more shout out for Nate’s 50th birthday.  Happy Birthday, and Happy Easter !

  1. What a terrific day, and a lot of fun! Thanks to everybody who was able to attend, we were very happy to have you with us. And for my lovely wife, who has done so many wonderful things for my birthday, I say thank you and I officially cede my role as “center of attention”. I agree with you, I’m getting a little tired of my birthday too! 🙂 Nonetheless, a great day! Love those green eggs!

  3. What a beautiful day to celebrate ,food looked delicious and way to go to Greg what a whopper of a bottle! Kelly I will teach you how to pipe with a bag ,you are a talented chef. Lots of great memories with the family gathered ,wonderful.
